From the Orange County Dietetic Association GI Symposium

“Hey SFSU Dietetic students, I wanted to share with you some interesting topics and information I received while attending the Orange County Dietetic Association GI Symposium this past January.

There were five presenters and each of them discussed a topic pertaining to a specific disease or condition related to the Gastrointestinal System. The first presented was Dr. Kapil Mehta, who discussed Irritable Bowel Syndrome. He provided us with IBS background, specific diagnostic criteria, approved therapies and alternative options to managing IBS.

Next was his wife, Jigna Mehta, RD at Kaiser Permanente in Irvine, who lectured on the role of a Fermented oligo- di- mono-saccharides, and polyols (FODMAP) diet in IBS. She touched on the relationship between FODMAP and IBS, reviewed a sample menu and provided other dietary and non-dietary interventions for IBS.

Shonda Brown a RD at Children’s Hospital in Orange County, discussed the Therapeutic Dietary Treatment of Pediatric Eosinophilic Esophagitis (EoE) a chronic immune/antigen mediated disease. She provided background about diagnosis criteria and therapeutic dietary treatments, educated us on elimination diets, the importance of assisting patients to manage these diets, and the RD’s role in treating patients with EoE through education of EoE therapies.

Next, we learned more about Gluten, and the difference between Celiac Disease versus a Gluten
sensitivity from Janelle Smith, Registered Dietician and President of the CDF Southern California Chapter. She differentiated between gluten-related disorders in terms of symptoms, diagnostic methods and treatment options, recommended appropriate medical nutrition therapy for each disorder, and educated us on co-occuring disorders that may impact patients with gluten-related disorders.

The last speaker was Gwendolyn Moore, MPH, RD, CLT, she specializes in Non-IgE Food sensitivities related to Migraine, Irritable Bowel Syndrome, Chrons, Fibromyalgia and other abnormal digestive and inflammatory adverse food reactions. Her lecture discusses the relationship between the gut micro biome and our health, and touches on different bacteria within the gut, leaky gut syndrome, and changes in gut bacteria that can precipitate disease.

It's Time to Pass the Baton!

We will be meeting in Rosa Parks F from 2 -3 pm for our April SDA meeting. We will be discussing elections for 2015-2016 SDA officer positions, the upcoming internship Match Day, and will also have an exciting guest speaker, Annie Lu. She is a CFS graduate from SFSU that is now working as the Director of Food Services at Mills Peninsula Hospital.
